Second Annual Twin Cities RFC Picnic

A very good time was had by all at the 2nd Annual rfc picnic.

As to comments about my 14 year old kid being a pack horse... it helps keep those hormones in line.

I brought the colonel's cole slaw, did a little grilled chicken, key lime pies and the strip and go nakeds...

Cole Slaw

6 cups cabbage - chopped very fine
2 medium carrots - grated
1 small onion
1 cup buttermilk
1 tbsp. sugar
1 pint mayo
8 oz onion-chip dip
2 tbsp. Italian Dressing

Mix all, chill overnight in sealed container.

Grilled Chicken

kinda speaks for itself... olive oil baste with 3/4 tsp. pepper, 1 clove garlic, 1/2 each of dry basil, thyme leaves, rubbed sage, oregano and marjoram leaves.

Key Lime Pie

1-14 oz. can sweetened condensed milk
3/4 cup lime juice
grated lime peel (optional)
1/2 cup whipping cream
3 oz. sour cream
3 1/4 oz. cream cheese
2 T. sugar
1-9" graham cracker crust (or 15-3" crusts)
egg whites

  1. Refrigerate all of the ingredients beforehand.
  2. If using grated limes peel, be sure to grate just the surface. Grating deeper will produce a bitter taste in the pie.
  3. Brush crust with egg whites. Bake in 300 deg. oven for 10 minutes and cool.
  4. Combine and whip cream cheese, sour cream and sugar. Mix 3-5 minutes till fluffy.
  5. Add condensed mikeand whipping cream. Whip for additional 2-3 minutes.
  6. Add lime juice and optional grated lime rind.
  7. Pour into cooled pie shell and refrigerate overnight.
  8. Serve with optional whipped cream garnished with grated lime rind.

The pie was a little too sweet for my liking. Also learned that key limes come from the Flordia keys... duh!

Strip and Go Nakeds

1 small can frozen lemonade
1 cup vodka
2 -3 beers

Mix... need anymore be said?

I had a wonderful time and would like to thank Barb for the bottle of Gedney Minnesota Peach Melba Preserves that she signed... I will forever keep it on the mantle of the fireplace next to that other green fuzzy thing I got from somewhere or other.

Elvis did show up in a boat, but when my son spotted him carry a tuna noodle hotdish while humming Rocky Mountain High he was dispatched with large stones without touching the shore.

As for those rec.gardening cross readers... only one elephant showed up which was spotted with a large glass of strip and gos in one of my lawn chairs.

Once again thank you Beth for a wonderful time and I'm hoping we can do the todo again soon.
