1/4 cup Butter or margarine -- Softened
2 cups Self-rising flour
1 cup Buttermilk
1 1/2 cups Cheddar cheese, regular or reduced fat -- Grated

Preheat oven to 425°F. Grease a large baking sheet and set aside. Use a pastry blender to cut butter into flour until it resembles corn meal; add remaining ingredients and stir only enough to moisten ingredients and mix in cheese. DO NOT OVERMIX! Drop by rounded tablepoons, 2 inches apart, on baking sheet and bake 12-15 minutes or until golden brown.

NOTES: I use Kraft Cracker Barrel Extra Sharp Cheddar Cheese.

Dark Chocolate Ganache

Chocolate Ganache in Philo Pastry 
Cups

1 1/2 cups heavy cream
2 tablespoons unsalted butter
18 ounces semisweet chocolate, chopped into 1/2 - ounce pieces

Heat the heavy cream and the butter in a 3-quart saucepan over medium high heat. Bring to a boil. Place the semisweet chocolate in a 3-quart stainless steel bowl. Pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth.

E. Walker's Cornmeal Griddle Cakes

1 cup corn meal
1 heaping teaspoon, to 1 level tablespoon shortening
(I usually use about 2 teaspoons)
3/4 cup hot water - just boiled
1 slightly beaten egg
1 tsp. salt
2 tsps. baking powder
1 cup milk - whole milk works best

Mix the shortening and the cornmeal, pour in the hot water. Mix till meal is in a ball. Mix in egg. Add salt and baking powder. Mix in milk about a half cup at a time. Batter should be very thin. Cook on high heat of griddle or waffle iron with griddle surfaces.

Yankee BBQ Eating Accessory Kits

Recently, in the IRC channel, I revealed that I eat both chicken and ribs with a fork, rather than picking them up and gnawing on them. Boli was horrified! Being the smartass that he is, he developed accessory kits for Crash and me, so we could eat our ribs without getting our fingers dirty. Inside each neatly labeled toilet paper roll was a pair of surgical gloves. LOL!
