White Clam Sauce

2 cups chopped clams undrained
1/4 cup butter or margarine
1/4 cup olive oil
1 large onion chopped
3 cloves garlic chopped
1 cup parsley chopped
1/8 teaspoon oregano
2 cups fresh mushrooms sliced
1/2 cup dry white wine
1 bottle clam juice (8 oz)
salt and pepper
grated parmesan cheese
pasta of your choice

Prepare pasta to your taste.

In a large skillet, heat butter and olive oil. Saute onion aned garlic until golden. Stir in parsley, oregano, wine, clams, mushrooms and about 4 oz of the clam juice. Simmer mixture 5 minutes adding additional clam juice if necessary. Season to taste with salt and pepper. Spoon sauce over pasta. Sprinkle with parmesan.

This recipe I really have fun with. Its traditionaly seved in "Real" Mexican resturants. It's put on the table when you sit down.
