Easy Cheese Biscuits

Makes 18 biscuits

1/4 cup Butter or margarine -- Softened
2 cups Self-rising flour
1 cup Buttermilk
1 1/2 cups Cheddar cheese, regular or reduced fat -- Grated

Preheat oven to 425°F. Grease a large baking sheet and set aside. Use a pastry blender to cut butter into flour until it resembles corn meal; add remaining ingredients and stir only enough to moisten ingredients and mix in cheese. DO NOT OVERMIX! Drop by rounded tablepoons, 2 inches apart, on baking sheet and bake 12-15 minutes or until golden brown.

NOTES: I use Kraft Cracker Barrel Extra Sharp Cheddar Cheese.
