Elmira Peach Pie

Preheat Oven to 450 F

Prepare sufficient pastry to line a 9 inch pie plate. Trim and flute edge but do not prick.

Beat with rotary beater until smooth:

1/3 cup all purpose flour
½ cup granulated sugar
1 cup thick dairy sour cream

Arrange with flat edges down in concentric circles in the pie shell, 5 cups quartered peaches (about 9 peaches).

Pour sour cream mixture over the peaches

Bake in 450 F oven for 15 minutes. Reduce to 350 and cook for another 30 –35 minutes or until filling is set.

Sprinkle over hot pie ¼ cup lightly packed brown sugar. Broil for 2-3 minutes until sugar is melted.

Serve warm
