Peach Salsa

2 fresh peaches (1 cup), chopped
1-teaspoon honey
1 teaspoon fresh lemon juice
2 tablespoons sliced green onions
2 tablespoons chopped fresh cilantro (or substitute parsley)
2 teaspoons grated fresh ginger root
1 small jalapeño pepper, seeded and finely chopped

Combine and let the flavors mellow for an hour or two in the refrigerator.

Serve with grilled or roasted salmon, lamb or chicken
